Irregular cut. Great for dishes with meat or cooking without skin.
Searing suggestion
If frozen, defrost one night in the fridge.
On the pan:
- cut the skin like a checkerboard
- fry-pan 4min skin side over medium heat
- fry-pan 8min meat side over gentle heat
Barbecue:
- cut the skin like a checkerboard
- grill 2min skin side over maximum heat
- stop the grill, cover and leave for 8min
- grill 3 min meat side over medium heat
